Sweet Potato Rolls

Ingredients

2 1/4 teaspoons or 1 envelope active dry yeast
4 tablespoons sugar, divided
1/2 cup warm water
1 1/3 cups canned sweet potatoes or yams, drained and mashed
1/4 cup butter or margarine, softened
2 eggs, beaten
1 teaspoon salt
3 1/4 cups flour

Directions:

Dissolve yeast and 1 tablespoon sugar in warm water. Let mixture sit 5 minutes.

Mash potatoes in a microwave-safe bowl and microwave 1 minute, or until warm. Add potatoes to yeast mixture. Mix in remaining sugar, butter, eggs, and salt until smooth. Stir in flour one cup at a time.

Knead by hand or by machine 1–3 minutes. Cover and allow dough to rise 50–60 minutes in a draft-free area. Punch down dough. Divide into 16 to 20 balls, adding small amounts of flour if needed to shape rolls. Place rolls in even rows in a greased 9 x 13-inch pan. Cover and allow rolls to rise 30–45 minutes, or until double in size.

Preheat oven to 350 degrees. Bake 16–20 minutes, or until golden brown. Makes 16–20 servings.
