Family Favorite Potato Rolls

1 1/4 cups warm water
1 teaspoon salt
2 tablespoons vegetable or olive oil
3 cups flour
3/4 cup instant potato flakes
2 tablespoons nonfat dry milk powder
1 tablespoon sugar
2 1/4 teaspoons or 1 envelope active dry yeast


Add ingredients in the order listed above to bread machine pan.* Select dough setting on your machine and press start. After 5–10 minutes, check dough. If needed, add 1 to 2 tablespoons water if too dry or 1 to 2 tablespoons flour if too sticky.

Preheat oven to 350 degrees.

Form dough into 12 balls. Place into greased muffin pans. Allow dough to rise 20–25 minutes, uncovered, in a draft-free area. Bake 18–22 minutes, or until golden brown. Brush tops with butter and serve. Makes 12 servings.

* This recipe can also be made with a heavy-duty standing mixer.
