Mooseball Soup

Ingredients

Mooseballs:
1/2 cup bread crumbs
1/2 teaspoon salt
1 1/2 pounds ground moose meat (or ground beef)
1 egg
1/2 teaspoon thyme
1 small onion, chopped very fine

Soup:
1 onion, chopped
3/4 cup sliced, fresh mushrooms or 1 small can mushrooms
1 tablespoon olive oil
2 cans beef broth
1 can stewed tomatoes
5 red potatoes with skins left on, cubed

Directions:

Mooseballs:
Mix bread crumbs, salt, ground meat, egg, thyme, and onion until well blended. Shape into 1-inch balls. Place in a Dutch oven and brown; remove and drain.

Soup:
In the same sauté pan used for meatballs, sauté onion and mushrooms in olive oil. Add beef broth, stewed tomatoes, and potatoes. Bring to a simmer and add the browned Mooseballs. Simmer until potatoes are done, 30–40 minutes; or if you are doing this on the wood stove, simmer all day until you have the snow shoveled and the wood chopped.
