Chinese Fried Rice

Ingredients

3 tablespoons oil
1 cup cooked chicken, pork or shrimp, chopped
2 eggs, beaten
3/4 teaspoon salt
1/2 teaspoon pepper
3 cups cooked rice, chilled
2 tablespoons soy sauce
1 Garnish: 2 green onions, snipped

Directions:

Heat oil in a deep skillet over medium heat. Add meat and cook for one minute. Add eggs, salt and pepper; cook, stirring constantly, until eggs are set. Add rice and soy sauce; cook, stirring constantly, for about 5 minutes, until rice is heated through. Garnish with green onions.

Tip: How spooky...mummy dogs! Simply wrap a strip of breadstick dough around individual hot dogs. Arrange them on an ungreased baking sheet and bake at 375 degrees for 12 to 15 minutes. Add eyes with dots of catsup or mustard.
