2 1/2 to 3 pounds chicken, quartered
4 cloves garlic, minced
1 1/2 teaspoons dried marjoram
1 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons honey
2 tablespoons balsamic vinegar

Remove and discard skin from chicken quarters, if desired; arrange in a shallow dish and set aside. Mix garlic and seasonings; rub into chicken. Combine honey and vinegar; brush over chicken. Cover and chill for at least 2 hours. Place chicken, bone-side down, over medium heat on grill rack above drip pan. Cover and grill for 50 minutes to one hour, until juices run clear.

Tip: A clean grill makes the tastiest foods. If there’s no wire brush handy, simply use balls of crumpled aluminum foil as scouring pads to clean the racks of your grill.
