Banana-Nut Bread

Ingredients

2 very ripe bananas
1/2 cup white sugar
1/2 cup brown sugar packed
2 eggs
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup light olive oil
1/2 cup chopped walnuts

Directions:

1. Place the bananas in a large mixing bowl, and mash with a fork or beat with an electric mixer. Add the white and brown sugars, and stir or beat to blend thoroughly. Drop in the eggs, and stir or beat to combine. Add the flours, baking soda, and salt, and combine. Add the oil to the batter a little at a time, mixing thoroughly. Finally, add the walnuts, and beat or stir to combine.

2. Generously grease a 4-x-8-inch loaf pan and turn the batter into the pan. Bake in a preheated 325°F oven for 50 to 60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.

3. Allow the bread to cool in the pan for 10 minutes. Then turn the loaf onto a wire rack and cool completely before serving. This bread is even better the second day.
