Un-Apple Pie

4 cups peeled, seeded, and sliced zucchini
1 water
1 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1 1/2 teaspoons cream of tartar
2 tablespoons flour or cornstarch
1 pinch of salt
2 (9-inch) unbaked pie shells


Cover zucchini slices with water and boil 2 minutes. Drain and set aside to cool. Mix all other ingredients together and stir gently through zucchini. Pour into pie shell and cover with top crust. Bake at 400° for 10 minutes, then lower heat to 350° for 20 minutes or until brown.
