Rollin’ Pin Strawberry Pie

3 egg whites
1/2 teaspoon baking powder
3/4 cup sugar
10 soda crackers, crushed fine
1/2 cup pecan, chopped
2 pints fresh strawberries, sliced
1 frozen whipped topping thawed


Spray a 9-inch pie pan with non-stick cooking spray. Beat egg whites and baking powder until stiff. Add sugar and continue beating until very stiff. Fold in crackers and pecans. Pour into pie pan. Bake at 300° for 50 minutes. Remove from oven; with fork, press crust down. Cool completely. Fill with strawberries. (Add no sugar to strawberries.) Press strawberries down to compact them. Cover with whipped topping. Chill at least 2 hours.
