Whisk eggs in a medium-size bowl. Add diced ham and onion. Add seasonings to taste. Sprinkle with Parmesan cheese to taste. Heat olive oil in bottom of sauté pan. Pour in frittata mixture and cook until one side is done. Flip and cook the other side until golden brown. Drain on paper towels. Serve for breakfast.
Note: Substitute other veggies and cooked meats, if desired.
