Stuffed Manicotti

1 pound milk bulk pork sausage
1 (6-ounce) can tomato paste
2 (15-ounce) cans Italian tomato sauce
1/4 cup water
1/2 - 3/4 tablespoon light brown sugar
1 (15-ounce) carton ricotta cheese
3 cups shredded mozzarella cheese, divided
1 egg
1 teaspoon parsley flakes
8 manicotti noodles, cooked, rinsed, drained
grated Parmesan cheese (optional)


In large saucepan, brown sausage; drain. Remove half and set aside. Stir tomato paste, sauce, water, and brown sugar into sausage; simmer 15 minutes. Meanwhile, in medium bowl, combine remaining sausage, ricotta, 2 cups mozzarella cheese, egg, and parsley. In a 9x13-inch pan, pour 1/3 of sauce mixture. Stuff noodles with cheese and sausage mixture, and place on top of sauce. Pour rest of sauce over noodles. Sprinkle remaining cup of mozzarella cheese and Parmesan on top. Bake uncovered at 350° for 20 minutes.
