Betty’s Tomato, Basil and Brie Sauce

6 - 8 tomatoes, peeled, cubed in small pieces
1/2 pound brie cheese, cubed in small pieces
1/4 cup olive oil
1 cup chopped fresh basil
3 - 4 cloves garlic, minced
1/2 teaspoon oregano
salt and pepper to taste
1 tablespoon red wine vinegar


Put all ingredients in a large bowl and let stand in a warm place (outside on a warm day) for several hours. Serve over cooked pasta.
