Although tortillas are the true "daily bread" for Mexicans, rolls and sweet breads are eaten frequently as well. Many different kinds of breads are enjoyed as a morning treat with coffee, tea, or hot chocolate. Oval-shaped Mexican sandwich rolls (bolillos) are also used to make delicious sandwiches and to accompany soups and many saucy dishes.
Bread (pan) made from wheat flour was introduced to Mexico by the Spanish in the 1500s and was further developed during the French occupation of 1864 to 1867. Bread baking has continued as an art and a highly respected occupation. In the best bakeries (panaderias) in the country, master bakers still instruct upcoming bakers by the apprenticeship method. Most bread baking in Mexico is done in bakeries, but there are a few special breads that can be adapted for home bakers. The results are still very good even though home kitchens lack the brick-lined ovens that give many of the breads their special texture and chewy quality.
During my many years of travel in Mexico, I have often visited local bakeries and still marvel at the skill with which they produce so many delightful shapes and varieties of bread and rolls, each one with its own name depicting something real or imagined.
One eye-catching bread, Pan de los Muertos (Bread of the Dead), is a round loaf decorated with dough-shaped crossbones for Day of the Dead (All Saints or All Souls Day) in November, a holiday honoring deceased loved ones. There are also delicately sweet everyday breads (pan dulces) such as the curved horn-shaped flaky rolls called cow horns (cuernos), round rolls cut and raised in the center and crusted with sugar called volcanoes (volcans), rolls with a carved shell design on top (conchas), and soft sweet rolls twisted to resemble bow-ties (corbatas).
Other special breads include Oaxacan Bread, which is soft and rich and usually eaten with hot chocolate for breakfast or as a snack in the evening, and Three Kings Bread, a glazed wreath-shaped bread filled with nuts and candied fruits, made for celebrations on January 6.
To get you started, this chapter begins with recipes for biscuits and muffins that are popular for breakfast or for a snack. There are also recipes for quick breads, which you can make for brunch or a treat anytime, such as Pumpkin Bread with Sunflower Seeds and Mango-Pecan Quick Bread. In addition to the specialty breads, wonderful additions to your Mexican baking repertoire are the several types of rolls you can use for sandwiches (tortas), with breakfast dishes, or to accompany stews. These breads are too good to pass up, so to simplify your efforts, the recipes call for quick-rising yeast and a food processor to make the dough.
Baking can be very satisfying and baking Mexican breads truly adds to the authentic experience of cooking and eating the Mexican way.
