9 pounds black beans
30 sliced green onions
2/3 cup red pepper flakes
1 1/4 cups lime juice
6 1/2 tablespoons cilantro
1 1/4 cups minced garlic
50 flour tortillas
10 cups grated Monterey Jack cheese
In mixing bowl lightly mash beans, then add the next 5 ingredients. In a lightly greased large skillet over medium-high heat, cook 1 tortilla for 15 seconds or until softened; turn over. Spread 1/5 of bean mixture over half of tortilla and top with cheese. Fold tortilla in half and cook for 3 minutes on each side. Serve immediately or place in a warm oven.
