4 cups mixed vegetables
1 (15-ounce) can garbanzo beans drained and rinsed (opt)
1 (15-ounce) can beet drained (opt)
1/3 cup low fat salad dressing of your choice (Thousand Island, Honey French, etc)


1. Place vegetables in a medium bowl. (Any color bell pepper seeded and chopped, chopped celery, chopped tomatoes, chopped onions, fresh parsley chopped fine, sliced carrots, chopped cauliflower or broccoli.)
2. Add beans and beets to bowl.
3. Toss with dressing and serve, or let guests dress their own.

Tastes great with:
Any main dish that’s a little low on vegetables, like Tortellini Stew, or Hungarian Chicken Paprikash
