Ingredients

1/2 cup whole grain instant brown rice
1 cup water
8 ounces pork tenderloin or 2 skinless, boneless chicken breasts or 12 ounces tofu (or 1/2 meat, 1/2 tofu)
1 onion
1 bunch broccoli
2 (8-ounce) cans pineapple tidbits in its own juice, drained
1 tablespoon cornstarch
2 tablespoons soy sauce reduced sodium
1 tablespoon canola or sesame oil
1 teaspoon minced garlic (2 cloves)
1 teaspoon ginger (fresh grated tastes best)
3 tablespoons slivered or chopped almonds or cashews

Directions:

1. Combine rice and water in a microwave-safe dish. Cover and cook on high 7 minutes, until tender.
2. Meanwhile, trim meat. Slice into strips or cube tofu. Set aside.
3. On a clean cutting board, cut vegetables into small pieces, keeping piles separate.
4. Drain pineapple juice into a 2-cup measuring cup. Add water to equal 3/4 cup of liquid.
5. Stir cornstarch and soy sauce into pineapple juice. Set mix aside.
6. Heat a large nonstick skillet or wok over medium-high heat. Add oil, garlic and ginger, then add meat or tofu and onion. Stir-fry 4 minutes until meat is cooked through. Stir pineapple juice mix and add to wok, stirring to mix.
7. Add the pineapple, broccoli and nuts. Cover and let simmer over medium-low heat 3 to 4 minutes.
8. Serve immediately over rice, while broccoli is still bright green.
