Marinated Vegetable Salad

3 carrots sliced diagonally
2 cups broccoli florets
2 cups cauliflowerets
1/2 green bell pepper seeded
1/2 red bell pepper seeded
1/2 yellow bell pepper seeded
2 green onions
1/2 cup light or fat free Italian salad dressing
1 teaspoon dried oregano


1. 1-3 hours hours before serving: Clean and prep vegetables, and place in a microwave-safe dish with 2 tsp water. Cover and microwave on HIGH 4 minutes, or until vegetables just begin to get tender. Transfer to a colander and rinse with cold water to halt cooking process.
2. Cut peppers into 1" slices and chop onions. Combine everything with cooked vegetables in medium bowl and toss.
3. Allow to marinate 1 to 3 hours in refrigerator and serve.

Tastes great with:
Grilled Turkey Burgers or Chicken Breasts
