Grilled Beef or Chicken Teriyaki

1/4 cup reduced sodium soy sauce
1 tablespoon firmly packed brown sugar
2 tablespoons water
2 teaspoons sesame oil
1/2 teaspoon ginger (fresh grated is best)
5 grinds fresh ground black pepper
1/4 teaspoon minced garlic (1 clove)
1 pound lean trimmed boneless beef top round steak or chicken breasts, venison, fish, or tofu, cut into chunks or strips
1 cup whole grain instant brown rice
1 3/4 cups water
1 head broccoli cut into florets
12 baby carrots


1. Night before or early morning. Mix soy sauce, brown sugar, water, sesame oil, ginger, black pepper, and garlic together in a bowl big enough to hold the meat you will be marinating.
2. Add meat and toss to coat. Allow to marinate, covered in refrigerator 8 hours or overnight. (Exception: for fish, do not exceed 2 hours in marinade) Toss several times during marination. Consider making Simple Summer Fresh Fruit Pie.
3. Preheat gas grill or broiler. Position oven or grill rack 6" from heat source.
4. 30 minutes before dinner. Place rice, water, broccoli, and carrots, in microwave-safe dish. Cover and place in microwave. Cook on high 10 minutes, until tender.
5. Remove meat from marinade and grill or broil. Check meat frequently for doneness. Discard marinade.
6. Serve with rice and vegetables, and fruit or fruit pie for dessert.
