Ingredients

1 (15-ounce) can red or pink salmon packed in water, rinsed and drained (or 2 cups flaked)
8 saltine crackers
1/4 cup seeded and diced red bell pepper
3 tablespoons light miracle whip
1 teaspoon lemon juice (bottled or fresh squeezed)
4 drops Tabasco Hot Sauce
1 bunch asparagus spears or green beans
4 hamburger buns
4 lettuce leaves
1 tomato sliced
4 cups watermelons cubes

Directions:

1. In a medium bowl, remove skin from fish and flake with a fork, mashing bones (great calcium).
2. Crush the crackers and add to bowl. Add bell pepper, Miracle Whip, lemon juice, and Tabasco. Mix well. Set aside.
3. Snap off asparagus bottoms or ends of green beans and place in a microwave-safe dish. Cover and microwave on high 7 minutes, until crisp tender.
4. Shape the salmon mix into 4 patties. Coat a large nonstick skillet with cooking spray and place over medium heat. Cook salmon cakes, turning once, until lightly browned on each side.
5. Assemble buns, lettuce, and tomatoes into burgers.
6. Serve with asparagus and watermelon on the side.
