Ambrosia Rice

2 (8-ounce) cans pineapple tidbits in its own juice
1 (15-ounce) can mandarin orange
2 cups cooked and chilled brown rice
1/2 cup chopped walnuts, pecans, or almonds
1/4 cup oat bran (dry, uncooked)
2 cups red seedless grapes washed well and patted dry
1/2 cup raisins or chopped dried apricots
1 (8-ounce) container strawberry lowfat yogurt
dash cinnamon and nutmeg (opt)


1. Open cans of pineapple and Mandarin oranges and drain. Reserve pineapple juice for another use. Place in large bowl.
2. Add remaining ingredients and mix gently.
3. Serve now or later. Will keep in refrigerator, covered, for 2 days.
