Depending on the brand, the moisture content of ricotta can vary, and excess moisture can make cakes and pastries heavy and soggy. To eliminate excess moisture, the ricotta can be drained. Line a fine-mesh strainer with cheesecloth. Place the strainer over a bowl. Add the ricotta to the strainer. Cover the ricotta with plastic wrap and place a heavy object such as a small plate on top of the ricotta. Place the strainer and bowl in the refrigerator and let stand 8 hours up to overnight. When ready to use, discard the liquid in the bowl. Use the ricotta according to the recipe directions.
