Tuna and Roasted Pepper Triangle Sandwiches

Ingredients

1 small roasted red bell pepper, drained and cut into thin strips
Extra-virgin olive oil
salt
1 (3 1/2-ounce) can Italian tuna packed in olive oil
2 tablespoons mayonnaise
1 to 2 teaspoon fresh lemon juice
1 tablespoon chopped green onions
1 teaspoon fennel pollen
4 slices good-quality white sandwich bread

Directions:

1 Toss the roasted pepper with a little oil and salt.

2 Drain the tuna and place it in a bowl. Mash the tuna well with a fork. Blend in the mayonnaise, lemon juice to taste, and green onion.

3 Spread the tuna on two of the bread slices. Top with the pepper strips. Cover with the remaining bread, pressing down slightly.
