Chicken Rolls with Anchovy Sauce

Ingredients

1/4 cup unsalted butter
4 anchovy fillets, drained and chopped
1 tablespoon chopped fresh flat-leaf parsley
1/4 teaspoon freshly grated lemon zest
8 thin-sliced chicken cutlets
Freshly ground black pepper
8 slices (thin) imported Italian prosciutto

Directions:

1 Place a rack in the center of the oven. Preheat the oven to 400°F. Butter a small pan.

2 In a small saucepan, melt the butter with the anchovies over medium heat, mashing the anchovies with the back of a spoon. Stir in the parsley and lemon zest. Set the sauce aside.

3 Place the chicken slices between two sheets of plastic wrap. Gently pound the slices to about 1/4-inch thickness. Lay the chicken slices on a flat surface. Sprinkle with pepper. Place a piece of prosciutto on each slice. Roll up the slices lengthwise. Place the rolls in the pan seam-side down.

4 Drizzle the sauce over the chicken. Bake 20 to 25 minutes or until the juices run clear when the chicken is cut in the thickest part. Serve hot.
