Open Bread Rolls

Directions:

Italian bars, motorway eating places, and snack bars serve sandwiches to go with the usual espresso. Many Italians who go out to work eat bread rolls or tramezino at midday. They are often magnificent artistic and culinary creations. The fillings usually include vegetables to make the meal complete. The fillings reflect the regional choice of ingredients in the combinations offered. Here are some suggestions of combinations:
A small open bread roll with toppings such as:
*A generous helping of salmon, lettuce, and complimented by a squeeze of lemon juice.
*Fresh mozzarella and tomatoes with a sprinkle of basil. Cherry tomatoes cut in half make it a pleasant looking sandwich.
*Wafer-thin slices of beef with cheese, arugula(salad), and a squeeze of lemon juice.
*Fried eggplant baked with mozzarella or other melting cheese and topped with a small spoonful of sauce (like garlic-tomato sauce).
*Prosciutto topped with a melting cheese, served hot.
*Speck (smoked ham) with Brie, garnished with scallions.
*Gorgonzola with chestnut honey served on top of a bed of lettuce.
*Roast meat with either sliced zucchini and thyme, or served with julienne strips of zucchini to add a crisp fresh note.
*Flatbread filled with fresh mozzarella and tomatoes.
*A hot buttery croissant with ham and a melting cheese.
*A small baguette with alternating slices of salami and artichokes.
