Bruschetta with Basil

Serves: 2

   8 slices crusty white italian bread
   1 teaspoon olive oil
   3 cloves garlic peeled and cut in half
   1 ounce mozzarella cheese cut into very small small cubes
   3-4 medium Italian plum tomatoes chopped
   4 leafs fresh basil cut into pieces

Rub one side of each piece of toast with the cut garlic and lightly brush with olive oil. Place on ungreased baking sheet. Bake at 450 for 3 to 5 minutes, or until slightly browned. In a bowl combine chopped tomatoes, mozzarella cheese and basil. Spread mixture on top of bread slices and serve.
