Tortilla Chips & Chicken Casserole

1 (10-ounce) package tortilla chips (slightly crushed)
2 cups Jack cheese (shredded)
3 cups cooked chicken (cubed)
1 tablespoon butter
3 tablespoons green onions (sliced)
1/2 cup milk
1 cup mushrooms (sliced)
1 (10 3/4-ounce) can cream of chicken soup
1 cup sour cream
1 (4-ounce) can chopped green chilies
1/2 teaspoon sea salt
1 (4-ounce) can sliced olives (drained)


Grease a 9 x 13 inch pan. Layer 1/3 of the crushed tortilla chips on the bottom. Sprinkle 1/3 of the Jack cheese over chips. Put 1/3 of the chicken over the cheese.

In large skillet saute mushrooms in 1 tablespoon of butter until soft. Remove from heat and add milk, cream of chicken soup, sour cream , green chili, salt and olives and green onions and mix well.

Pour 1/3 of the sauce over chicken layer; repeat layers of tortilla chips, shredded cheese, chicken and sauce, 2 more layers, top off with remaining cheese. Cover with foil.

Bake at 350 degrees covered for about 40 minutes, uncover and continue baking for 10 minutes more until cheese is melted.
