Creamy Chicken & Spaghetti Casserole

1/2 cup onion (diced)
1/2 cup celery (diced)
1/2cup mushrooms (sliced)
1/4 cup butter
1 1/2 cups chicken broth
1 (8-ounce) package cream cheese (cubed)
8 ounces spaghetti (cooked and drained)
2 cups chicken (cooked and cubed)
1 (2-ounce) can chopped pimiento (drained)
1/4 teaspoon sea salt
1/2 cup Cheddar cheese (shredded)


In large pan add 1/4 cup butter, saute onion, celery and mushrooms for about 5 minutes over medium heat, stirring frequently. Add the chicken broth and cubed cream cheese. Stir over low heat until cream cheese is melted.

Add spaghetti, chicken, pimento, and salt. Mix lightly.

Spoon mixture into a greased 9 x 13 inch pan; top with Cheddar cheese.

Bake at 350 degrees for 30 minutes. Let stand 5 minutes.
