Cranberry-Orange-Nut Bread

Ingredients

4 cups flour
1 1/2 cups sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon baking soda
2 cups cranberries washed, picked over, cut in halves
1 cup walnuts or pecans, chopped
2 teaspoons orange rinds grated
2 eggs beaten
1 1/2 cups orange juice concentrate
1/2 cup vegetable oil

Directions:

Sift together dry ingredients. Stir in cranberries, nuts and orange rind. Combine eggs, orange juice and vegetable oil. Add to dry ingredients, stirring until just moistened. Divide batter into 3 lightly greased and floured 7 1/2 x 3 1/2 x 3 1/4 -inch loaf pans. Bake in a preheated 375° F oven for 45 to 50 minutes or until done.
