Spread each piece of bologna with cream cheese that has been mixed with a little horseradish, if desired. Layer the bologna until all pieces are used. Wrap stack of layered bologna and place in refrigerator. When ready to serve, cut into bite-size triangular wedges.
Editor's Extra: This is an extremely quick hors d’oeuvre that will surprise your guests. You can substitute most any kind of sliced deli meat for the bologna. Fun to stack in smaller layers and cut in different shapes, or roll each spreaded slice, and cut in half or thirds, then pierce with decorative toothpicks.
