Pumpkin Bowl Stew

Ingredients

1 medium pie pumpkin (pie pumpkins have thick, meaty sides)
1 cup sliced carrot
1 cup diced potato
1 cup sliced parsnip
1 cup chopped onion
1 cup chopped celery
1 (10 1/2-ounce) can chicken broth
1/4 teaspoon allspice
2 tablespoons chopped basil
3 tablespoons chopped Italian parsley
1 tablespoon chopped thyme

Directions:

Clean pumpkin, remove seeds, and scrape the inside. Reserve the "hat." Put the ingredients (uncooked) into the pumpkin. Place the pumpkin on a cookie sheet. Bake in a preheated 300° oven for 3-4 hours. The pumpkin and root vegetables will combine to make their own thickening. Replace "hat."
