Peach Muffins

Ingredients

1 1/2 cups flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup sugar
2 eggs, well beaten
1/2 cup salad oil
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
1/4 cup chopped almonds (optional)
1 1/4 cups coarsely chopped fresh or drained canned peaches

Directions:

In mixing bowl combine dry ingredients; make a well in center of mix. Add eggs and oil, stirring only until dry mix is moistened. Stir in remaining ingredients. Spoon 1/3 cup batter into greased muffin tins; bake at 350° for 20-25 minutes, or until muffins test done.

Variation: For Peach bread, spoon batter into a greased and floured 5x9-inch loaf pan; bake at 350° for 1 hour, or until bread tests done.
