Feta Cheese, Apple & Spiced Pecan Salad

Ingredients

2 tablespoons wine vinegar
1 tablespoon + 1 teaspoon Dijon style mustard
1/2 cup olive oil
salt and freshly ground pepper to taste
1 head red leaf lettuce, torn in pieces
1 head Boston lettuce (or 1/2 Boston and 1/2 romaine), torn in pieces
1 red Delicious apple, finely chopped
1/2 pound feta cheese, crumbled

Spiced Pecans:
3 tablespoons unsalted butter
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cayenne pepper
dash of hot pepper sauce (like Tabasco)
1 2/3 cups pecans (6 ounces)

Directions:

Mix vinegar and mustard in large bowl. Gradually whisk in oil. Season with salt and pepper. Add lettuce and toss to coat. Sprinkle apple, cheese, and Spiced Pecans over salad and serve.

Spiced Pecans:
Melt butter; mix in seasonings. Pour butter mixture over pecans; toss. Spread on heavy cookie sheet. Bake until crisp, about 15 minutes at 300°. Cool completely.
