Veal Scallopine

Serves: 4

1 pound thin veal cutlets
1/2 cup flour
1/2 pound fresh mushrooms, sliced
2 tablespoons polyunsaturated oil
1/2 cup low salt chicken stock
1/2 cup dry white wine
1/4 teaspoon freshly ground black pepper
1 teaspoon kosher salt
1 lemon, juiced


Dredge the veal in the flour. Brown the veal and mushrooms in the oil in a skillet. Add the chicken stock, wine, pepper, salt and cook covered over low heat for 30 minutes. Add the lemon juice and cook 5 minutes more.
