Tomato Salad

2 pounds tomatoes, sliced
1 large red onion, chopped
2 tablespoons freshly chopped flat parsley
1 tablespoon freshly squeezed lemon juice
3 tablespoons extra virgin olive oil
1/4 teaspoon kosher salt
2 cloves garlic, crushed
1/2 teaspoon dried mint leaves
1 cup toasted bread crouton


Mix the tomatoes, onion, parsley and mint in a bowl. Blend the lemon juice, oil, salt and garlic and pour over the tomatoes. Just before serving, mix in the croutons.
