Spinach Salad

Serves: 4

1 package fresh spinach, torn into bite sized pieces
3/4 teaspoon kosher salt
1/2 teaspoon sugar
1/8 teaspoon dry mustard
1/8 teaspoon freshly ground black pepper
1 clove garlic, crushed
3 tablespoons freshly squeezed lemon juice
1 tablespoon water
1/2 cup extra virgin olive oil
1/4 cup chopped onion
2 cups sliced mushrooms
2 cups sliced radishes


Combine the salt, sugar, dry mustard, pepper, garlic, lemon juice, water, oil and onion in a jar. Cover and shake until thoroughly mixed and chill.

Before serving, combine the spinach, mushrooms and radishes in a large bowl. Pour the dressing over the vegetables and mix well.
