3 tablespoons white vinegar
1 tablespoon Dijon style mustard
1 teaspoon white horseradish
2 tablespoons scallion, minced
2 tablespoons celery, minced
1 tablespoon flat leaf parsley, minced
1/2 cup polyunsaturated oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper


Combine the first six ingredients in a bowl. Beat in the oil a little at a time. Add the salt, pepper and cayenne and mix well. Serve cold over seafood.
