Omelet for Two

Ingredients

1 cup liquid egg substitute
1/4 teaspoon kosher salt
1/2 teaspoon cream of tartar
2 teaspoons polyunsaturated oil
1/4 green pepper, diced
1/4 onion, diced
4 mushrooms, sliced
4 cherry tomatoes, quartered
1 teaspoon Canadian bacon, diced (optional)
1 ounce part skim mozzarella cheese or Sapsago cheese, grated

Directions:

Combine the egg substitute, salt and cream of tartar in a bowl and beat until blended and frothy.

Heat an omelet pan or 8-inch skillet. Add the oil and heat. Pour in the egg mixture and cook undisturbed until the bottom is set and the top begins to become firm. Loosen the eggs with a spatula. Sprinkle the vegetables and cheese (and optional Canadian bacon) over the entire surface and fold the omelet in half. Reduce the heat and cook covered for 10 minutes.
