Marinated Mushrooms

Serves: 6

1/3 cup red wine vinegar
1/2 cup polyunsaturated oil
1 clove garlic, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 bay leaf
1/4 teaspoon thyme
1 pound white mushrooms, sliced


Mix all the ingredients in a large bowl, cover and refrigerate for 2 hours. Discard the bay leaf. Drain and reserve the marinade to use as a salad dressing. Serve cold.
