Cioppino

Ingredients

1/4 cup polyunsaturated oil
3 cloves garlic, chopped
1 1/2 cups chopped onions
3/4 cup chopped scallion
3/4 cup chopped green pepper
1 jar whole clams, drained and liquid resereved
1 (28-ounce) can diced tomato
1 (6-ounce) can tomato paste
1 3/4 cups dry red wine
1/3 cup chopped parsley
1/2 teaspoon dry basil
1/2 teaspoon dry oregano
2 tablespoons kosher salt
1/4 teaspoon freshly ground black pepper
3/4 cup water
1 1/2 pounds halibut steaks
1/2 pound medium shrimp, shelled and deveined
3 (6 1/2-ounce) cans king crab meat, drained

Directions:

Sauté the garlic, onion and green pepper in the oil in a 6 quart kettle until tender. Add the clam liquid, diced tomatoes, tomato paste, wine, parsley, basil, oregano, salt, pepper and water to the kettle, mix well and bring to a boil. Reduce the heat and simmer uncovered for 10 minutes

Remove the skin and bones from the halibut, cut into 1-inch chunks and add to the mixture.

Add the clams, shrimp and crab and simmer covered for 15 minutes and then uncovered for 15 minutes more.

Serve hot over rice.
