Chicken Salad

1/2 cup low fat Greek yogurt
1/4 cup mayonnaise
1/2 teaspoon kosher salt
1/4 teaspoon curry powder
1 tablespoon skim milk
2 1/2 cups cooked diced chicken
1 cup diced celery
2 tablespoons chopped red onions
1/2 cup slivered almonds
Belgian endive leaves


Mix together the yogurt, mayonnaise, salt, curry powder and milk. Add the chicken, celery and onion and toss well. Chill thoroughly.

Toast the almonds in a dry sauté pan over medium heat until beginning to brown.

Before serving, mix in the almonds and spoon onto the endive leaves.
