Cabbage Slaw

Serves: 6

3 tablespoons cider vinegar
1 teaspoon sugar
1 teaspoon kosher salt
1/4 teaspoon tarragon
1 head green cabbage, shredded
1 large red apple, cut into bite sized pieces


In a covered 12-inch skillet over medium heat, warm the vinegar, sugar, salt and tarragon for 5 minutes. Add the cabbage, increase the heat and cook for 15 minutes until the cabbage is tender-crisp. Remove from the heat, stir in the apple and serve.
