1/2 bunch chives or scallions, trimmed
2 shallots or 1/2 small onion, coarsely chopped
2 cloves garlic, peeled and corsely chopped
1 rib celery, medium, coarsely chopped
1/4 cup cilantro leaves
1/4 cup parsley, fresh Italian (flat-leaf)
2 tablespoons mint leaves, fresh
2 teaspoons thyme leaves, fresh or 1 teaspoon dried
1/2 scotch bonnet chile, seeded and deveined, or 1/4 cup chopped green bell pepper
3/4 cup water
1/4 cup lime juice, fresh, or more to taste
1/2 teaspoon black pepper, freshly ground
1 tablespoon yeast, active, dry
1 tablespoon sugar
1 1/4 cups water, warm
2 1/2 cups flour, unbleached, all-purpose, plus more as needed
2 teaspoons baking powder
1 1/4 teaspoons salt
