_Substitutions, Milk

Serves: 5

Ingredients

Directions:

Vance's foods:
Vance's makes an excellent dairy free, egg free, casein free, soy free powdered milk base. I use this a lot because it keeps well on the shelf and it tastes great! You can only get it online at www.vancesfoods.com.

Rice Milks:
You can order rice milks online or purchase them at well-stocked supermarkets or health food stores. Some rice milks contain traces of barley malt, so always check the labels carefully.

Soy Milks:
You can pick these up at any health food store or most well-stocked supermarkets. Be aware that some people who have Celiac also have an allergy to soy. If you have a hard time with soy, or find yourself reacting the same as if you had eaten gluten, don't use soy milk as your substitute.

Goat's Milk:
Goat's milk contains casein, but has much less lactose than cow's milk. It is more expensive, but has a nutritional content most comparable to cow's milk. You can buy it from most supermarkets. Canned and powdered goat's milk are usually located on the baking aisle. Fresh goat's milk can be found refrigerated with the rest of the dairy.

Tofutti:
This company makes dairy free products such as cream cheese, sour cream, ice cream bars, etc. You can find some of their products in health food stores. To learn more about them visit www.tofutti.com.

Almond Milk:
Made with water and pulverized almonds. Many people prefer the taste of almond milk to rice milk. It is slightly more expensive. You can find it at most health food stores or you can make your own. Just put 1 cup blanched almonds into a food processor and grind. Add 3 Tbs. honey and 1 teaspoon vanilla. Slowly stir in 1 1/2 to 2 cups water. With a cheese cloth, strain any pulp out of the mixture.

Coconut Milk:
This is not the coconut water found in the middle of the coconut, but actual pureed coconut. It seems high in fat but recent studies have shown that coconut fat is good for you. You can find it in the Asian food section in most well-stocked supermarkets.
