Ingredients

2 1/2 cups milk
1/2 cup sugar
1/2 teaspoon salt
1/4 cup vegetable oil
1 3/4 cups GF Featherlight Mix
2 eggs

Directions:

Beat together milk, sugar, salt, oil, Featherlight mix, and eggs.

Set a nonstick pan on medium heat, or use a griddle, and melt a little butter in it. Pour about a 1/4 cup of batter into pan. Use a spatula to spread as thin as possible (the thinner the better). Cook until slightly brown, then flip and cook about 1 minute more.

Top with whipped cream and jam, then roll them up and indulge!
