Lazy Guy's Pasta with Tomatoes and Garlic


Serves: 4

Ingredients

10 ounces whole grain pasta
4 medium ripe tomatoes
3 tablespoons chopped fresh basil
3 tablespoons minced fresh Italian parsley
2-3 tablespoons tamari sauce
2 tablespoons olive oil
1-2 tablespoon balsamic vinegar or to taste
3-4 cloves garlic pressed
freshly ground black pepper to taste

Directions:

1. Bring a large pot of water to a rolling boil. Add the pasta and cook according to package directions.

2. While the pasta cooks, finely chop the tomatoes and place in a large bowl. Add the basil, parsley, tamari, oil, vinegar, garlic, and pepper, and mix well.

3. Drain the pasta and add to the bowl with the tomato mixture. Toss to coat.

4. Serve as is or topped with freshly grated Parmesan cheese or some fresh chevre. VARIATION Top the pasta with sautéed broccoli or spinach, along with a handful of walnuts. Or add some crumbled feta cheese. Decrease or omit the tamari if adding feta.
