Pizza Sauce

Ingredients

1 (28-ounce) can tomato, drained
2 (6-ounce) cans tomato paste
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon onion powder
1 teaspoon dried oregano leaves
1 teaspoon dried basil leaves
1 pinch red pepper flake, , optional
1/4 teaspoon fennel seed, optional
3/4 teaspoon garlic powder
2 teaspoons olive oil
1 teaspoon sugar
1/8 cup grated Parmesan cheese

Directions:

Place drained tomatoes in a medium saucepan. Using clean fingers, squeeze them into small bits. Add the tomato paste and stir well. Stir in the remaining ingredients, except Parmesan cheese and 1 teaspoon sugar. Bring to a boil reduce heat and simmer, uncovered, for about 20 minutes. Add cheese and sugar and simmer for 10 more minutes. Cool and ladle into freezer containers. Seal, label, and freeze.
