Mint Chocolate Chip Pie

6-8 cups mint chocolate chip ice cream, softened
1 (9-inch) chocolate cookie crumb pie crust
2 (1-ounce) squares semi-sweet baking chocolate


Spoon softened ice cream into prepared crust. Melt chocolate in a microwave-safe bowl until smooth. Drizzle over ice cream. Freeze 6-8 hours or overnight. Remove from freezer 15 minutes before serving. For longer storage, cover, label, and freeze pie for up to 2 months.
