Apple Pecan Coffee Cake

Ingredients

1/4 cup vegetable shortening
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 cup flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup sour cream
3/4 cup peeled, finely chopped apple
1/4 cup , chopped pecans, or other nuts
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 tablespoon butter or margarine, melted

Directions:

Cream shortening and sugar. Add egg and vanilla beat well. Mix flour, baking powder, baking soda, and salt together add to creamed mixture alternately with sour cream. Fold in apples. Spread batter into a greased 8 x 8 x 2-inch baking pan. Combine pecans, brown sugar, cinnamon, and butter. Sprinkle over batter. Bake at 350° F. for 30-35 minutes. Cool 10 minutes. Remove from pan cool thoroughly. Wrap coffee cake in foil, label, and freeze.

To serve, heat frozen coffee cake in foil at 350° F. for 30 minutes or until warmed through. Open foil wrap last 10 minutes of heating.
