Apple Pecan Coffee Cake

Serves: 9

   1/4 cup vegetable shortening
   1/2 cup sugar
   1 egg
   1/2 teaspoon vanilla extract
   1 cup flour
   1 teaspoon baking powder
   1/4 teaspoon baking soda
   1/8 teaspoon salt
   1/2 cup sour cream
   3/4 cup peeled, finely chopped apples
   1/4 cup chopped pecans or other nuts
   1/4 cup brown sugar
   1/2 teaspoon cinnamon
   1 tablespoon butter or margarine, melted

Cream shortening and sugar. Add egg and vanilla; beat well. Mix flour, baking powder, baking soda, and salt together; add to creamed mixture alternately with sour cream. Fold in apples. Spread batter into a greased 8 x 8 x 2-inch baking pan. Combine pecans, brown sugar, cinnamon, and butter. Sprinkle over batter. Bake at 350° F. for 30-35 minutes. Cool 10 minutes. Remove from pan; cool thoroughly. Wrap coffee cake in foil, label, and freeze.

To serve, heat frozen coffee cake in foil at 350° F. for 30 minutes or until warmed through. Open foil wrap last 10 minutes of heating.
