Country Chicken


Serves: 4

Ingredients

3 pounds chicken
salt and pepper
1 onion, cut in wedges
1 green bell pepper, diced
2 stalks celery, diced
1/3 cup sliced carrot (optional)
1 teaspoon poultry seasoning
2 cloves garlic, minced
1 1/2 teaspoons curry powder
1 (14 1/2-ounce) can diced tomato, do not drain
3 tablespoons raisins

Directions:

Place all ingredients in crock pot. Cover, set on LOW and cook 8 to 10 hours. If you are around, baste the chicken with the juices once in a while. Skim off fat before serving. Garnish with slivered almonds and parsley if you wish.
