Pineapple Paradise

Ingredients

1/2 cup butter, softened
1 cup granulated sugar
2 eggs
1 (18 1/4-ounce) box yellow cake mix
1 (20-ounce) can crushed pineapple, drained, reserve juice
3/4 cup packed brown sugar
3/4 cup chopped pecans
3/4 cup coconut (optional)

Directions:

Beat butter and sugar till creamy; add eggs. Alternately add cake mix and reserved pineapple juice; fold in pineapple. Spread into a greased 9x13-inch baking pan. Combine brown sugar, nuts, and coconut, if desired; sprinkle over batter. Bake in 350° oven 30–35 minutes or till toothpick inserted in center comes out clean. Best served warm.
