Mini Spini Crabmeat Pies

Ingredients

Pastry:
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon chopped fresh thyme
1 stick firm butter, cut into pieces
1/2 cup sour cream
3 tablespoons cold water
1 egg, beaten
fresh or dried thyme leaves

Filling:
1 (10-ounce) package frozen cut leaf spinach, thawed, squeezed dry
6 ounces crabmeat
1 cup shredded Swiss cheese
1/4 cup finely chopped red onion
1/4 cup sour cream
1/4 teaspoon salt

Directions:

Pastry:
Combine flour, salt, and thyme. Cut in butter until mixture resembles coarse crumbs. Blend in sour cream. Gradually add water, 1 tablespoon at a time, until mixture forms a ball.

Filling:
Mix all ingredients until well blended. Roll pastry on lightly floured surface till thin, about 1/16 inch thick. Cut into 2 1/2- to 3-inch circles. Spoon about 1 teaspoon Filling in center of each circle. Brush edge of circle with water. Fold in half and press edges to seal. Place on ungreased, 10x15-inch, baking pan. Brush with egg, then sprinkle with thyme. Bake at 400° for 20 minutes or till golden brown.

Fun Fact: For a large buffet, it’s a good idea to put out a few hot pads on your buffet table, reserving space for last minute hot dishes. Colorful tile blocks and footed trivets look nice empty . . . then save your table!
